Cut the ends off the cucumbers and then slice the cucumbers down the middle. Cut cucumbers into chunks. You can leave them peeled or peel them, your choice.
In a bowl, combine all remaining ingredients and mix well.
Add in cucumbers. Toss to coat.
Cover and chill for at least 4 hours. Stir occasionally.
