Creamy Herbed Cucumber Chunks

Ingredients
  • 2-3 Large English Cucumbers, Peeled or Unpeeled
  • ½ Cup of Greek Fat Free Plain Yogurt
  • 1 Tablespoon of Apple Cider Vinegar
  • ½ Teaspoon of Splenda
  • 2 Tablespoons of Roughly Sliced Fresh Chives
  • Salt/Pepper to Taste
Instructions
  1. Cut the ends off the cucumbers and then slice the cucumbers down the middle. Cut cucumbers into chunks. You can leave them peeled or peel them, your choice.
  2. In a bowl, combine all remaining ingredients and mix well.
  3. Add in cucumbers. Toss to coat.
  4. Cover and chill for at least 4 hours. Stir occasionally.
  5. This makes 4-6 servings at 0 Freestyle Points for the entire recipe. Enjoy!
