Kid Friendly Sweet Roasted Red Pepper Potato Soup

Just a quick note, you are definitely going to want to double this recipe. This is a "souper" hearty soup and is even better the next day. Also, it freezes beautifully. Pair it with a nice salad and a crusty loaf of French bread.
Ingredients
  • 2 medium yellow or Vidalia onions, chopped
  • 2 teaspoons of Canola Oil or Olive Oil
  • 1 jar of roasted red sweet peppers, chopped (7-8 ounce jar)
  • 2 teaspoons of ground cumin
  • 1 teaspoon of salt
  • 1 teaspoon of ground coriander
  • 3 cups of peeled diced potatoes
  • 3-4 cups of chicken broth
  • 1 tablespoon of lemon juice
  • ½ cup of cream cheese
  • cracked black pepper to taste
Instructions
  1. In a saute or frying pan, heat oil and saute onions until lightly brown and translucent.
  2. In a soup pot,add chicken broth. Stir in onions, red peppers, cumin, salt and coriander. Cook and stir for 2 minutes.
  3. Stir in potatoes and bring to a boil.
  4. Reduce heat and cover. Simmer until potatoes are fork tender. Stir in lemon juice. Pull off heat.
  5. Pour half to three quarters of soup into a blender and puree with the cream cheese until blended thoroughly.
  6. Pour back into soup pot and heat through. Serve with additional add-ins as you wish. Add cracked black pepper to taste.
