Deep South Watermelon Salad

  • 1 Seedless Watermelon, Cubed
  • 4 Large Cucumbers, Sliced & Quartered
  • 2.5 Cups of Athenos Fat Free Feta Cheese*
  • Cracked Black Pepper, to Taste
  • Fresh Basil, Snipped, Optional
  • ½ Cup of Lime Juice
  • 2 Cloves of Minced Garlic
  • Kosher Salt and Black Pepper, to taste
  • ¼ Teaspoon of Dried Parsley
  • Up to ⅛ Cup of Granulated Swerve Sweetener
  1. Combine all salad ingredients into a bowl and mix well. Set aside.
  2. In a separate bowl, combine all dressing ingredients. Whisk together while slowly adding the Swerve until it's just sweet enough. Add salt and pepper to taste.
  3. Pour over salad mixture and toss to combine. Refrigerate until ready to serve.
  4. This serves 6-8 people at 0 Freestyle Points per serving.
