Slow Cooker Pork Loin with Root Vegetables

- ½ Pound Carrots, Cut into Chunks
- 1 Large Onion, Quartered
- 1 Apple, Cored and Cut into Chunks
- 2 Tablespoons of Truvia Brown Sugar Blend
- 2 Teaspoons of Salt
- Pepper to Taste
- 1.5 Teaspoons of Paprika
- 4 Pound Pork Loin (Boneless)
- ½ Cup of Unsweetened Apple Juice
- 2 Tablespoons of Cider Vinegar
- 1 Tablespoon of Worcestershire Sauce
- 1 Teaspoon Each of Salt and Yellow Mustard
- Vegetable Cooking Spray
- Spray the slow cooker with vegetable cooking spray and add the carrots, onion and apple.
- In a bowl combine Truvia, salt, pepper and paprika. Rub mixture over the pork loin and put pork loin on top of vegetables in slow cooker.
- Whisk the remainder of the ingredients well and pour around the pork loin.
- Cover and cook on on LOW for about 3.5 -4.5 hours or until a thermometer reads 145 degrees.
- When done, remove and let the roast sit for about 10 minutes covered with foil (loosely).
- Serve pork with vegetables.
