Slow Cooker Pork Loin with Root Vegetables

Ingredients
  • ½ Pound Carrots, Cut into Chunks
  • 1 Large Onion, Quartered
  • 1 Apple, Cored and Cut into Chunks
  • 2 Tablespoons of Truvia Brown Sugar Blend
  • 2 Teaspoons of Salt
  • Pepper to Taste
  • 1.5 Teaspoons of Paprika
  • 4 Pound Pork Loin (Boneless)
  • ½ Cup of Unsweetened Apple Juice
  • 2 Tablespoons of Cider Vinegar
  • 1 Tablespoon of Worcestershire Sauce
  • 1 Teaspoon Each of Salt and Yellow Mustard
  • Vegetable Cooking Spray
Instructions
  1. Spray the slow cooker with vegetable cooking spray and add the carrots, onion and apple.
  2. In a bowl combine Truvia, salt, pepper and paprika. Rub mixture over the pork loin and put pork loin on top of vegetables in slow cooker.
  3. Whisk the remainder of the ingredients well and pour around the pork loin.
  4. Cover and cook on on LOW for about 3.5 -4.5 hours or until a thermometer reads 145 degrees.
  5. When done, remove and let the roast sit for about 10 minutes covered with foil (loosely).
  6. Serve pork with vegetables.
