Ingredients
  • Chicken Tenderloins (2 Pounds)
  • 2 Each Medium Onion, Red Pepper & Green Pepper, Sliced into Thin Strips
  • 2 Teaspoons Each of Chili Powder and Dried Cumin
  • 1 Can of Rotel Diced Tomatoes with Green Chilies, Drained
  • Salt/Pepper to Taste
  • 8 Ole xTreme Wellness High Fiber Low Carb Tortillas
  • Vegetable Cooking Spray
Instructions
  1. On a large baking sheet that has been sprayed with vegetable cooking spray combine tenderloins, tomatoes and vegetables. Spray the top of the chicken and vegetables with cooking spray and add salt/pepper, chili powder and cumin on top.
  2. Bake at 400 degrees for about 30 minutes or until chicken is not pink inside. Halfway through the cooking time, stir chicken and vegetables around.
  3. Spoon mixture into a warmed tortilla and season with 0 Point toppings.
  4. This recipe serves 8 and each tortilla is 1 Point. Enjoy!
