Bacon Wrapped Shrimp Skewers

  • 8 Slices of Center Cut Bacon, Cut in Half
  • 16 Jumbo Shrimp, Peeled
  • 1 Can of Pineapple Chunks Packed in Water, Drained
  • ½ Cup of Guy's Award Winning Sugar Free Barbecue Sauce
  • Wooden Skewers
  • Vegetable Cooking Spray
  1. Soak 16 wooden skewers in water (if using) for 30 minutes. Preheat oven to 400 degrees.
  2. Place a chunk of pineapple on top of a shrimp and wrap the whole thing in one of the half slices of bacon. Stick the skewer through the pineapple, shrimp and bacon securely. Do remaining skewers the same way.
  3. Take a cookie cooling rack and spray with vegetable cooking spray. Set the cooling rack on a parchment lined baking sheet. Put shrimp skewers on top and brush with Sugar Free Barbecue Sauce on both sides.
  4. Roast for 10 minutes. Take out of oven and brush again with more barbecue sauce. Return to oven and bake until you hear the bacon sizzling - about 15 minutes.
