Here's a complete chicken dinner in a foil packet! Each packet is 4 Freestyle Points. Enjoy!
  • 6 Tablespoons of Land O' Lakes Whipped Butter
  • 2 Tablespoons of Nature's Hollow Sugar Free Honey Substitute
  • Salt/Pepper to Taste
  • 2 Ears of Corn, Shucked & Cut into 1" pieces
  • ½ Pound of White Mushrooms, Stemmed & cut into Slices
  • 1 Bunch Scallions, Trimmed & Cut into 2" Pieces
  • 1 Teaspoon of Dried Thyme
  • 4 Skinless Boneless Chicken Breast Cutlets
  • 1 Teaspoon of Paprika
  1. Preheat a grill to medium high heat. In a bowl, mix the butter, honey substitute, salt & pepper.
  2. Tear 4 square sheets of heavy duty aluminum foil. On one side of each sheet, evenly divide the corn slices among the 4 square sheets. Add mushrooms, scallions and dried thyme.
  3. Season chicken cutlets with more salt/pepper and paprika and put on top of the vegetables.
  4. Place a tablespoon of the "honey" mixture on top of each cutlet. Fold the other half of the foil over the chicken and vegetables. Fold the ends to seal, but don't close too tightly. The air must circulate to cook the meat.
  5. Grill the packets for about 8 minutes. Flip them and gently press on them with a spatula. Cook for another 8 minutes. Flip them onto a platter to rest for about 3 minutes. Open the packets and divide the remaining "honey" mixture on top of chicken.
  6. This recipes makes 4 servings and is 4 Freestyle Points per packet. Enjoy!
