This Deep South Watermelon Salad will soon become a favorite to your Weight Watchers Freestyle Menu. This serves 6 people and is protein packed as well. Perfect for an Appetizer, Side Dish, Lunch or even Light Dinner. And even though this dish is 0 Points, it will fill you up for hours.
Ingredients
  • 1 Small Seedless Watermelon, Cubed
  • 1 Red & Green Bell Pepper, Diced
  • ½ Pound of Green Beans, Trimmed
  • ½ Red Onion, Chopped
  • 2 Cans of Black Eyed Peas, Drained & Rinsed
  • 1 Jalapeno Pepper, Thinly Sliced (Remove Seeds for less heat)
  • Sweet Lime Dressing Recipe
  • ½ Cup of Lime Juice
  • 2 Cloves of Minced Garlic
  • Kosher Salt and Black Pepper, to taste
  • ¼ Teaspoon of Dried Parsley
  • ⅛ Cup of Granulated Splenda
Instructions
  1. Combine watermelon, red and green bell peppers, red onion, jalapeno pepper and drained black eyed peas together in a bowl and combine. Set aside.
  2. Bring a saucepan filled with water to boil. Add green beans and cook until al dente.
  3. Drain and put green beans into a bowl that has been filled with ice cubes.
  4. Drain and pat dry and snip into 2" pieces.
  5. Add beans to cubed watermelon mixture.
  6. In a separate bowl, combine lime juice, garlic, dried parsley. Whisk together while slowly adding the Splenda until it's just sweet enough. Add salt and pepper to taste.
  7. Pour over salad mixture and toss to combine. Refrigerate until ready to serve.
  8. This serves about 6 people and 0 Freestyle Points each.
