Pickled Mushrooms

Ingredients
  • 1.5 Pounds of White Mushrooms, Cleaned
  • 1 Red Onion, Sliced in Half and Separated into Rings
  • 1 Minced Garlic Clove
  • ½ Cup of Rice Wine Vinegar
  • ⅓ Cup of Canola Oil
  • 2 Tablespoons of Water
  • 1.5 Teaspoons of Salt
  • 1.5 Teaspoons of Splenda
Instructions
  1. In a large bowl combine everything except mushrooms and onions. Whisk to combine.
  2. Add onion and mushrooms.
  3. Toss to coat everything.
  4. Cover and refrigerate at least 8 hours.
  5. Makes at little over 4 cups. Each ½ cup serving is 3 SmartPoints on the Blue, Green & Purple Plans.
