Pickled Mushrooms

- 1.5 Pounds of White Mushrooms, Cleaned
- 1 Red Onion, Sliced in Half and Separated into Rings
- 1 Minced Garlic Clove
- ½ Cup of Rice Wine Vinegar
- ⅓ Cup of Canola Oil
- 2 Tablespoons of Water
- 1.5 Teaspoons of Salt
- 1.5 Teaspoons of Splenda
- In a large bowl combine everything except mushrooms and onions. Whisk to combine.
- Add onion and mushrooms.
- Toss to coat everything.
- Cover and refrigerate at least 8 hours.
- Makes at little over 4 cups. Each ½ cup serving is 3 SmartPoints on the Blue, Green & Purple Plans.
