Shakshuka

This North African egg dish is very similar to Eggs in Purgatory but this recipe is served with Pita Bread for dipping. This is a one person serving at 0 points - not including the Pita Bread points.
Ingredients
  • ¼ of an onion, chopped small
  • ¼ red bell pepper, chopped small
  • 1 clove of minced garlic
  • ½ teaspoon of dried cilantro
  • ¼ teaspoon of ground cumin
  • ¼ teaspoon of paprika
  • Pinch of red pepper flakes, optional
  • 8 ounce can of whole peeled tomatoes, crushed by your hand
  • 3 Eggs
  • Salt/Pepper to taste
  • Vegetable cooking spray
Instructions
  1. Spray a medium ovenproof pan with cooking spray. Saute the vegetables and spices over medium heat. Cook about 3 minutes stirring.
  2. Preheat oven to 375. Stir tomatoes with juices into skillet. Reduce heat to a low simmer and stir until tomatoes break down and sauce thickens. This takes about 20 minutes.
  3. Using back of a spoon, make 3 "wells" in the sauce and crack eggs into each well. Using a rubber spatula run edge of spatula through the egg whites to break them slightly to help them set. Do not break the egg yolks though.
  4. Transfer skillet to oven and bake for about 15 minutes until eggs are set.
  5. Serve with warm pita bread for dipping.
  6.
