Cucumber Honeydew Feta Salad

Perfect for the upcoming Summer season, this Cucumber Honeydew Feta Salad is the perfect crisp cool dish to take to a barbecue, picnic or as a delicious dinner side dish that will get you out of the kitchen fast.
Ingredients
  • 4-5 LB Honeydew, Seeded & Chopped into Bite Sized Cubes
  • 1 Large Cucumber, Seeded (You can peel it too if you prefer)
  • Red Onion, Chopped
  • 1 Teaspoon of Dill Weed
  • 1 Teaspoon of Poppy Seeds
  • 5 Tablespoons of Light Balsamic Salad Dressing (I use Ken's)
  • 1 Cup of Fat Free Crumbled Feta Cheese (I use Athenos)
Instructions
  1. Combine honeydew, cucumber, red onion, dill weed and poppy seeds in bowl.
  2. Stir to combine.Chill for about 3 hours.
  3. When ready to eat, drain salad mixture into a strainer to reduce water collected.
  4. Put back into serving bowl and pour dressing onto salad and mix well
  5. Right before eating, sprinkle fat free feta over top of salad.
  6. Serve.
  7. Makes about 6 cups @ 1 Point Each.
