Quick and Easy Berry Sheet Pan Pancakes from Scratch

Ingredients
  • ½ of a Large Ripe Banana
  • 1 Cup of Rolled Oats
  • 1.25 Cup of Unsweetened Almond Milk
  • 1 Tablespoon of Pure Maple Syrup (+ more to serve)
  • 1.5 Teaspoons of Baking Powder
  • 1 Teaspoon of Pure Vanilla Extract
  • 2 Teaspoons of Ground Cinnamon
  • 1.5 Cup of Fresh Blueberries, Divided
  • 1 Cup of Sliced Strawberries, to serve
  • Butter Flavored Cooking Spray
Instructions
  1. Preheat your oven to 375°F and spray a rimmed baking sheet (this is the one I use) with Butter Flavored Cooking Spray. You can also forego using the Butter Flavored Cooking Spray and just line the baking sheet with parchment paper .
  2. In a high-powered blender or a food processor, combine the banana, rolled oats, almond milk, maple syrup, baking powder, vanilla extract, and cinnamon. Blend until thick and smooth.
  3. Pour the pancake batter onto the sheet pan and top with one cup of the blueberries.
  4. Place in the pre-heated oven and bake until the batter is set in the center, slightly puffed up, and golden brown around the edges, approximately 20 minutes.
  5. Remove from oven and cool for 10-15 minutes before slicing. Serve immediately with additional maple syrup, the remaining blueberries, and fresh, sliced strawberries, if desired.
  6. On Weight Watchers Personal Points Plan, if you chose Oatmeal as a 0 Point Food, each serving is only 1 Personal Point.  If you did not chose Oatmeal as a 0 Point Food, each serving is 2 Personal Points. Enjoy!
