Slow Cooker Lightened Up Buffalo Chicken Dip

Ingredients
  • 1 Pound of Boneless Skinless Chicken Breast
  • 4 Ounces of Light Cream Cheese (1/3 Less Fat)
  • ½ Cup Each of Fat Free Sour Cream + Fat Free Fage Plain Greek Yogurt
  • ½ Cup of Franks or Texas Pete's Hot Sauce
  • ⅔ Cup of Walden Farms Ranch Dressing
  • ½ Cup of Reduced Fat Blue Cheese Crumbles
  • 1¼ Cup of Kraft Fat Free Shredded Cheese
  • Snipped Fresh Parsley, Optional
  • Vegetable Cooking Spray
Instructions
  1. Place chicken breasts into a slow cooker that has been sprayed with vegetable cooking spray.
  2. Add just enough water to cover the chicken breasts. Place lid on and cook for 4 hours on the high setting. Drain water and shred the cooked chicken breast with 2 forks or with a mixer.
  3. Combine all the ingredients except the cheeses and parsley and mix well.
  4. Pour into the slow cooker and stir in the shredded chicken. Cook for 2 hours on low. After 2 hours, remove the lid and sprinkle the blue and cheddar cheese on top. Replace lid and cook for about 15 more minutes OR until cheddar cheese is melted. Add parsley (if using) before serving.
  5. This makes 10 servings at ⅓ Cup per person. Serve with crackers, chips or any of the 0 SP suggestions in blog post.
